<div class="recipie_desc">Not sure where I got this recipe, it&#8217;s been laying around for a while, wasn&#8217;t even sure I had tried it before. I bought a &#8216;meat loaf&#8217; pack (includes beef and pork) and added a bit more ground round to get 2 lbs of meat, and used &#8216;Better n Eggs&#8217; instead of a real egg. The mix is very sticky, and after cooking the loaf is very moist. I love mine on a bun with ketchup and yellow mustard, but it was great even on a plate on its own (I ate the ends of the loaf this way). Being as moist as it is, you&#8217;ll want a spatula to get the slices out of the dish in one piece. Delicious!</div>

<li>In a large bowl, mix all ingredients. I use my hands to get it all mixed up good, be sure to wash em good afterwords, their&#8217;s pork in there!</li>

<li>Bake at 350 degrees for about 90 minutes, until it reaches 170 degrees so the pork is well cooked.</li>
<li>Once fully cooked, drain the fat and cut into slices about 1&#8243; thick.</li>

<div class="recipie_desc">When I was a kid I remember having Zucchini Casserole. I haven&#8217;t found that recipe, but I saw this one on <a href="http://AllRecipe.com" class="autohyperlink" title="http://AllRecipe.com" target="_blank">AllRecipe.com</a> that has Zucchini, and sounded good. They specified it as a side dish for a Mexican meal. I was looking more for a main dish, so I added chicken to it. It turned out great, so good I ate it all in two meals (not doing so good controlling my portions these days!). When I make it again, I&#8217;m going to change it a bit. I&#8217;ll reduce the Zucchini and cheese to 1 lb each. I&#8217;ll cook the vegetables a little less, so they are a little firmer. Then, after mixing in the first half of the cheese, I&#8217;d put everything into a casserole dish, put the rest of the cheese on top, and bake for a bit (I&#8217;m guessing 20 minutes at 350 degrees). This will make it a bit more like a casserole, and a little firmer than I had this time.</div>

<li>In a large sauce pan, add the olive oil, and cook the cubed chicken over medium-high heat.</li>
<li>Add the zucchini, corn, onion, green pepper, and tomato and cook over medium heat until tender.</li>
<li>Gently stir in the sugar. Add cheese on top, but do not stir. Cover, and continue cooking until cheese is melted. Stir, and add remaining cheese. Cover and continue cooking until melted.</li>

I got all the ingredients, accept the baby artichokes, which I couldn&#8217;t find. I decided to try regular artichokes instead, which I boiled to make more tender, but unfortunately most of it was too tough. Other than the artichokes being to tough, the rest of the recipe was good, very good flavor. The inner parts of the artichoke that were tender didn&#8217;t have a whole lot of flavor, so I guess I can say I don&#8217;t dislike artichokes, but so far I&#8217;m not amazed by them either. The original recipe called for this to be served over a slice of toasted Italian country loaf bread, I went without the bread.</div>

<li>Cook pasta according to package directions; drain and set aside.</li>
<li>Meanwhile, cut off bases of baby artichokes, if using. Snap off outer leaves until pale green petals are reached. Cut off top third of an artichoke; trim the artichoke stem. Quarter artichoke lengthwise and remove fuzzy &#8216;choke&#8217; if necessary. Repeat with remaining artichokes.</li>
<li>In a large skillet, cook garlic in 2 tablespoons of the hot olive oil for 30 seconds; remove from skillet. Add artichokes to skillet and cook for 1 minute. Add shrimp and wine to skillet. Cook and stir for 2 minutes or until shrimp turn pink. Stir in tomatoes, broth, butter, lemon peel, salt, nutmeg and cooked pasta; heat through. Mix in the parslely and drizzle with remaining olive oil.</li>
<p><strong>Shrimp Broth:</strong> In a large saucepan, combine 3 cups water, the reserved shells from the 1 pound of shrimp, 4 sprigs flat-leaf parsley, 1 slice lemon, and 1/4 teaspoon ground black pepper. Bring to boiling over high heat; reduce heat. Simmer, uncovered, for 10 minutes. Strain and set aside until serving time.</li>

<div class="recipie_desc">This is my favorite meal from my childhood, and I still love it today. It&#8217;s quick to make, uses inexpensive ingredients, and tastes great. Their&#8217;s a funny story behind this one. When I was in college, cooking on my own for the first time, I tried to figure out the recipe on my own. Most of the ingredients are simple, but I wasn&#8217;t sure about the tomato part. The first time I made it with tomato paste (I told you, it was the first time I cooked on my own!), and that didn&#8217;t turn out so good. I stepped down to tomato sauce the next time, still not right. I finally asked my grandmother, whom the recipe came from, and found out it was tomato SOUP. So now I know&#8230;</div>

<li>Brown the ground beef. I use ground chuck. Be sure to drain as much of the fat as possible.</li>
<li>Chop the onion into small pieces, and add to the meat. Cook over medium heat until the onions are nearly transparent.</li>
<li>Prepare the macaroni.</li>
<li>When the noodles are ready, drain the water, and add the meat and onions, as well as the soup. Stir the ingredients over low heat.</li>
<li>Salt to taste and enjoy!</li>

I&#8217;ve had this one many times, and the tomato flavor is so good I keep thinking I could just use the sauce over pasta alone. Combine the great flavor with chicken that&#8217;s falling off the bone from a day in the slow cooker, and you&#8217;ll need extra portions on this one (they suggest 8 servings on the package, I&#8217;ve calculated calories based on 4, I generally eat it all in two servings)!</div>

<li>Spread mushrooms evenly across bottom of slow cooker.</li>
<li>Trim unwanted skin and fat from chicken pieces and lay them evenly over the mushrooms.</li>
<li>Mix the seasoning, tomatoes, and tomato paste until blended. I substitute a quart of whole canned tomatoes for the two cans of stewed tomatoes. Pour the mixture evenly over the chicken and mushrooms.</li>
<li>Cook 8 hours on low, or 4 hours on high. The meat will generally be more tender with the longer cooking time.</li>
<li>When finished cooking, place chicken pieces over prepared linguine (I use wheat linguine), and spoon the sauce and mushrooms over the top.</li>

I was curious to try couscous, and this one looked interesting. The original recipe included 1/4 cup fresh cilantro, but I&#8217;m not much for cilantro so I eliminated it. <li>Place the sun-dried tomatoes in a bowl with 1 1/2 cups water. Soak 30 minutes, until rehydrated. Drain, reserving water, and chop. I cut mine into about 1/2&#8243; pieces, but if I make this again I&#8217;d cut them smaller as they are extremely flavorful. I then soaked for another 10 minutes (in fresh water) after chopping until all the pieces are soft, and drain, again saving the water.</li>
<li>In a medium saucepan, combine 1 1/2 cups of the reserved sun-dried tomato water. Bring to a boil. Stir in the couscous. Cover, remove from heat, and allow to sit 5 minutes, until liquid has been absorbed. Gently fluff with a fork.</li>
<li>Heat the olive oil in a skillet. Stir in the sun-dried tomatoes, garlic, and green onions. Cook and stir about 5 minutes, until the green onions are tender. Mix in the basil, and lemon juice. Season with salt and pepper. Mix in the mushrooms, and continue cooking 3 to 5 minutes. Toss with the cooked couscous and serve.</li>
